When spring comes around the corner and our landscapes take on a verdant hue, how can we atune our eyes to see the edible greens that pop up along our pathways?

Emily will lead us in the art of wild foraging and teach us delicious recipes to bring out the sweetness in hearty greens. We will venture around the fields, cook in the kitchen, and enjoy the dishes we made on the farm!

Here at Happy Girl, we offer a daily bowl on our menu. The idea of the bowl is based on local and seasonal produce (always organic!) and is our hearty and filling menu option. Join Chef Suzanne and Kitchen Manager Luis as we explore some ideas and create a meal based on the Bowl.

Pickles is a fun word to say and they are a real fun thing to make.  In this workshop you will learn how to make pickles in 3 different ways.  You will learn how to make fresh refrigerator pickles, fermented pickles and shelf stable vinegar brined pickles that will be hot water bath canned.  

Pickling is one of our favorite things to do at Happy Girl Kitchen. This workshop will begin with an introductory talk and tasting and we begin to divulge all of our secrets on how to get the right texture and flavor in your pickles. All of our recipes are simple and delicious and we will teach you how to keep it safe and yummy. We will cover topics of PH and botulism and flavor combinations. Then we head into the kitchen to begin creating the magic. 

This workshop includes a delicious organic light lunch.

We are on the brink of citrus season, and California has such an amazing variety of it. Now is the time to learn how to play with citrus in sweet & savory ways! In this workshop, join Jordan Champagne, Happy Girl Kitchen Co. co-founder, to explore the wonderful world of citrus. She will cover fabulous recipes for these robust fruits, including safe water-bath canning and basic food safety. Learn how to make Moroccan pickled lemons, candied citrus peels, honeyed oranges and citrus spritzer for cocktails and take home one jar of each recipe. You will leave with a wealth of knowledge of how to preserve citrus and how to add it to meals to make them over-the-top delicious.

You will go home with 3 jars of goodies and a lot of knowledge.  We will share organic snacks and goodies throughout the workshop too!

After a multi-year hiatus, PigWizard will be teaching the Half Hog Butchery Class again! 

I demonstrate a cut, and then you try it yourself. Limiting the class to 
6 spots allows me to get around to everyone for personal instruction. 
Lunch is included, and at the end of the day each person (or couple, limited to 2 spots) will go home with half of a antibiotic-free and hormone-free Berkshire/Duroc cross hog (about 90lbs), 6" semi-flexible boning knife, 10" diamond sharpening steel, and a 22" bone saw.

In this workshop we will cover all you need to know how to make delicious marmalades and to preserve food safely. We will begin with an introductory talk covering the topics of hot water bath canning and the PH scale and food safety. We will experience how to make velvety marmalades that have a perfect balance of sweet and tart and sour.  You will learn from Happy Girl Kitchen's founder all of her secrets to make delicious marmalades and experiment with recipes in combining different citrus and spices to create your own marmalades.  It is sure to be fun and informative!

We will make marmalades with lemons, limes, oranges and grapefruits and cover different flavor combining options. We will make 3 different recipes and you will go home with 1 jar from each recipe! YUM!

Kick off the New Year right by getting more fermented foods into your diet!  Learn the skills that you need to make all sorts of fermented products in your home.  Fermented foods can help aid digestion, boost the immune system and are a big energy booster.  They are a great way to bring in the New Year!

Fermenting is one of our favorite things to do at Happy Girl Kitchen. Mexican food has a big influence on the Californian scene, particularly for vegetarians. For a fun an instructive evening, join Happy Girl chef, Suzanne, and Kitchen Manager and Oaxacan native, Luis, an evening inspired by the flavors of Mexico. We will create and enjoy a Mexican inspired dinner together and enjoy a fun-filled evening at the same time! For this fiesta filled evening we will be making all of the ingredients for an enchilada casserole – handmade corn tortillas, creamy refried beans, roasted vegetables and housemade enchilada sauce. We will also be making a fresh salsa, salad.
